well apart from the scenes mentioned i remember when first playing uakm i thought the scene with the geiger was awesome. heh flashy graphics for those days. As for pandora i dont think it had a bad moment. From the cut scene where you first get the case to the intense moment before malloys death and tex jumping out a firey window. Riveting stuff. I think Its the only game with multiple endings that I went to the effort to watch them all. Overseer also had some great moments gideons death and the moment I think tex becomes the hardboiled PI we know and love. Of course there are the countless laugh your arse off little scenes that are too many to list.

I am replaying UAKM and Tex has the plastic jug with Pug's head inside in his hands. As he pats the bottom, one can't help but but notice the jug is definitely plastic. But, when he tosses it out the window it hits the sidewalk and shatters into a million pieces! I love it!
Speaking of cut scenes, how about the one with the floating audio/visual cube of the Chameleon. He was nuts, to say the least. I thought Russel Means did a pretty good job of acting (not Oscar material, but he seemed to put his soul into it).
