Yes, this is a cool thing but I've seen this demonstrated more than ten years ago at a Society of Information Display Conference (back when I used to do R&D for plasma TVs.)
I sincerely apologize for sounding like a downer, because I do agree that it really is a cool thing. No question about it. But it is not as new and futureistic as you might think. It is simply a large, horizontal touch screen. The main innovation is the use of multiple cursors or touch points.
I am proud to say that I designed and built a digital juke box 6 years ago that does almost exactly what you see in one of the demos.
Watch this space. In about a month I am going to announce a new product that some people in the industry have hailed as the next paradigm in human computer interface. I've been working on it for the last two years and it is very close to being released.
I will send a free version to any of you that want to try it, as soon as it's ready.

NPR was talking about them last night. I found it interesting that Microsoft actually is planing to release surface this year... Usually this kind of tech gets introduced and then years later we see the real application.
Althought it sounds like Microsoft is only going to sell them to commercial use formats. (for bars, restrauants, hotels and such)

One would think that inventing something and getting it to work is most of the work. I'm learning the hard way that that is only the tip of the iceberg. Making the thing into a viable commercial product and marketing it is an almost unending and insurmountable challenge.

But also, then you market a product like that which is supposed to integrate seemelssly with a whole range of other devices, you have to think about timing. For example, if you released something like that now, it would be useless becuase nobody would have the devices to take advantage of it with.
That's the main reason why blue-tooth took off... becuase before it was fully integrated it began popping up in devices as a new (but not fully advertised) feature... so that by the time blue-Tooth became a household name in communications, you could turn to your devices and say "Wow, I've got that!"... same with USB.... USB was in computers years before devices began supporting it.
So in order to see the sucess of something like this, Microsoft must make sure than plans years ahead by integrating it as much as possible before making a worldwide announcement... otherwise you will have a lot of people expecting too much from something that is essentially under-developed... Did someone say VISTA!?

Ugh. Vistas. For all the new stuff it's supposed to do, let's boil it down for the non technical guy who just bought himself a new computer. What are the real differences between XP and Vistas? Well, XP actually works, for one. To put it into even laimens-e-er terms, here's what it is for me.
I feel like I have a great big brand new house. But for some odd reason I'm having a real tough time putting my olf furniture in, and it's not comfortable.

The term "touch screen" needent be taken too literally. There are several touch screen technologies. One including small 'cameras' has been around for years also. There was a sort of similar touch screen device I saw a long time ago. It was a full size keyboard for Palm or pocket devices. This device projected a keyboard onto any surface and then sensed your finger's positions on the keyboard with camera-like sensors. I can't think of the name of the company right now. I'll try to remember. (Old age, you know.)
Btw Vista is $#it! I just turned it on a second ago only to find that my Desktop files have all been deleted.. Which is really forking great because I just created my Uber cool website over at http://www.Neuromancer.Moddb.com
FORTUNATELY I was able to use a File Recovery program and it recovered the data.. Let that be a lesson to microsoft not to ever ever ever again release a non-tested Beta version out to the public.
I'm very disapointed in Microsoft yet again. I'm betting Surface will probably have all kinds of bugs. And even then I'll be more interested in the Apple equivilant (I'm guessing it'd probably be called iTable or something along them lines)
